Espolón favours craftsmanship over mass production—to extract more rich, intense flavours, we cook our agave piñas for 18 to 20 hours and our distilling process lasts 5½ hours
Two expressions are available Blanco and Reposado, with vastly different labels telling the bold stories of fictional characters, Rosarita and Guadalupe: Inspired to the bone, Guadalupe and Rosarita joined Father Miguel Hidalgo in his brave campaign for Mexican independence from Spain.
As depicted in this label’s scene—an illustration inspired by 19th century artistry—our couple fought fiercely, and with undying passion. As Ramón the Rooster crowed his shrill battle cry, the brave army of revolutionists clashed against tyranny, against the cruel caste system, willing to sacrifice everything for the cause. And although their bold efforts fell short, this movement set the stage for Mexico’s eventual independence.
Our Agaves are grown at 1800 – 2000m above sea level in the ‘Golden Triangle’ of the highlands. We harvest at a minimum age of 6 years, but usually between 8 – 12 years. Our Agaves are split into 4 and cooked agaves are pressed and crushed before fermentation. We tackle Distillation two ways; with Column and Pot distillation. Espolon Reposado is aged in new, lightly charred white American oak.
